Ingredients 8 red peppers 10-12 fresh green onion leaves, softened in boiled water 1 glass of ricotta cheese 4 spoons of feta cheese crumbled ½ glass of walnuts crushed ½ small spoon black pepper ¼ small spoon peperoncino ½ bunch parsley finely chopped 2-3 spoons extra virgin olive oil

Preparation
Red peppers:
Roast red peppers on barbecue until they get totally soft. Take them on a plate and cover with stretch film (pellicola) for 5 minutes. Get out and peel them off. Cut them longwise in reasonable dimensions so that they can be rolled.
Filling:
Mix ricotta, feta cheese, walnuts, black pepper, peperoncino, parsley. Add salt if needed.
Rolls:
Prepare rolls of red pepper with the filling, tie them with green onion leaves. With the help of a spoon, put olive oil on top of the rolls.
